Tomatoes 4

So often we eat tomatoes raw. Some people snack on tomatoes just as they are fresh from the garden. Others slice them up and put them on a sandwich or eat them seasoned with salt and pepper. There are many ways to have cooked tomatoes also.

 

Cooked Tomato and Pepper Salsa

1 lb of firm red tomatoes that you peel, seed, and finely chop, 1.5 lb of mixed sweet peppers, 3 red or green chilies, 1 large red onion, 2 peeled cloves of garlic, 3 Tbsp olive oil, 3 Tbsp lemon juice, 2 tsp salt, 3 Tbsp chopped cilantro (or parsley if you are not a cilantro person).

This is an easy recipe. Cooking time is about 5 minutes. You will need a food processor. The required container to have is sterile canning jars. Yields about 2 pints and in the refrigerator has 6 months shelf life. It is ready to eat right away.

Steps

All other veggies need to be coarsely chopped and put into the food processor. Leave out the tomatoes. Add the garlic, lemon juice, olive oil, and salt. Process together until finely chopped.

In a pan combine everything in the food processor with the tomatoes and cilantro. Bring to a boil and simmer for 5 minutes.  Pour into the jars. This is good to go for you immediately!

Note: This salsa can also be eaten without cooking it. If you choose that option, be sure you marinate it for 2-3 hours before you eat it. Remember to keep it in the refrigerator, it will last 1-2 weeks.
