Tomatoes 1

Summer means gardening and most gardens have tomato plants. There is nothing better than home-grown DIY food for the table. Tomatoes can be used in every meal you have in the day. Work them into your breakfast, lunch, snacks, and dinner. Use those tomatoes. They taste great.

Health Benefits of Tomatoes

Tomatoes carry a third of the vitamin C that your body needs daily. They also have antioxidants that your body needs to help prevent cancer and heart disease.

Your body can benefit, and your stomach and taste buds will thank you.

1 cup of red tomato is 32 calories, 2 grams of fiber, 427 mg potassium, 25mg vitamin C.

Tomato 101

There are literally hundreds of kinds of tomatoes.  They vary by shape and size.

I personally love Beefsteak tomatoes, Cherry tomatoes, and Roma tomatoes.  What I came to understand is that there are an enormous number of Beefstake and Cherry tomatoes because they are both classified as a variety.  Roma falls under the classification of Plum & Pear tomatoes.

Tomato Tips

If you are on the hunt for tomatoes, look for soft but not mushy. If you seek out green tomatoes they are hard like an apple.

Keep tomatoes on the counter and out of direct sunlight. Keep them away from the stove heat. Place them away from other fruit and not in the refrigerator. Research shows that the tomato sugars and acids are altered if refrigerated.

Some Ways I Use Tomatoes

Breakfast with eggs and you can add spinach or other veggies.

Know Your Mountain!

I truly believe in the concept that you need to know your mountain. Honestly, I need to feel those people around me and acknowledge how they contribute to me being me. I, in turn, work hard to be there for others.
